Creamy Asparagus Soup

Soups are one of my favorite things to cook and also to eat. Mostly because you can make them from whatever you have in the fridge. Plus, they are very easy to make and so delicious! Actually, they are amazing light dinners.

This one is one of my most delicious soup recipes. The soup is so creamy, and every ingredient is healthy and beneficial. Usually when I make soup, I just go with the flow. That means I don’t follow any particular recipe or ingredients list. As I already said, I just put together anything I can find in my fridge. In this recipe I used lots of asparagus, onion, garlic, coconut oil, potato, lime and seasoning. You can easily make the soup without the potato, but if you like your soup very creamy, use the potato too.

I usually don’t have time for complicated dinners during the week, so this soup is great for midweek dinner or even lunch. This recipe is great if you want to detoxify and cleanse your body, because it will help you lose all the toxins. (More of asparagus benefits in ‘Benefits’ section below.)

Asparagus is one of the healthiest vegetable out there. It is very nutrient dense food. Asparagus is great source of fiber and contains lots of vitamins like A, C, E and vitamin K. Also, it is one of the best natural sources of folate. This is why asparagus is known to lower the risk of cancer. Low levels of folate actually increase the risk of breast cancer in women. This green treasure is also packed with chromium, which helps transport glucose from the bloodstream into cells. Besides that, asparagus is full of antioxidants. It is very good in neutralizing cell-damaging free radicals, which helps to slow aging process. Plus, it isĀ  known to be a good ‘brain food’. Folate in it helps humans mental flexibility and helps you stay focused.

Asparagus is great natural diuretic, because it contains lots of amino acid asparagine, which helps the body get rid of all toxins and excess salt. That is why it is great to include asparagus in your diet, when you want to lose a pound or two.

Serves: 2 Prep Time: Cooking Time:


  • 10 Asparagus Spears
  • 1 Small Potato
  • 1 Onion
  • 2 Garlic Cloves
  • 1/2 Lime
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Coconut Oil
  • 3 cups Water


  1. Chop onion and put it in a pot with coconut oil. Add salt and start cooking.
  2. When onion is slightly caramelized add chopped garlic, asparagus and potato (1/2 inch pieces). Roast this for about a minute.
  3. After a minute, add water, stir and cook for another 20-25 minutes.
  4. When cooked, remove from the stove and blend it with stick blender until smooth.
  5. Add juice of half a lime and pepper.
  6. Enjoy.


You can also blend the soup in blender, if you don't have stick blender. Besides that, you can add any spices you want. I stick to classic salt and pepper for this one. You can reduce the cooking time by chopping the vegetables into smaller pieces. If you want thicker soup, add less water, and if you want it runnier, add more of it.
