Greek Yogurt Chicken Spread on Cucumber ‘Toast’
What do you do when you have chicken leftovers in your fridge? Most of the times, I’ll make some kind of spread or salad. Depends on what other ingredients I have on hands. This time I made spread with Greek yogurt, which adds such a nice texture and creaminess to the mixture. Plus, it has its own health benefits, which are explained in the paragraph below. I then added some onion, garlic, salt and pepper, parsley and lime. You know, the basics. I love parsley in my spreads. Basically I love my parsley in everything, to be honest.
You can substitute Greek yogurt for any other kind of yogurt, but this one will definitely be one of the creamiest options out there. I must say I always use full fat yogurt, as it contains less sugar, is more natural and tastes better. If you don’t eat dairy, you can use coconut yogurt or soy one instead.
I love these kinds of spreads, because you can make it on the weekend and easily store it in the fridge. This way it will last you next few busy week days, when you usually don’t have the time to cook. #mealprep
This chicken spread goes perfectly with -as I call them- cucumber toasts. They are actually just cucumber slices. Of course you can use normal bread toasts or crackers, or even carrot sticks instead. Whatever you like the most. Or you can eat the spread like a salad, on its own.
Greek yogurt is known to be a lot more nutritious than other yogurts. It contains a lot more proteins like regular yogurt (twice as much protein as regular yogurt) and has probiotics that are good for your gut. Besides that, it normally has less sugar in them than other substitutes. Not just sugar, Greek yogurt has lower amount of sodium than regular yogurt as well. That is very important fact, as the salt problem is getting bigger and bigger in people’s diets (almost every food contains sodium).
This kind of yogurt contains less carbohydrates and because of that, it’s easier for our bodies to digest it. Regular yogurt has up to 17 grams of carbohydrates per cup, where Greek one has just about 9 grams.
Greek yogurt is very recommended to the people, who wants to lose weight, as it helps you feel full for longer, thanks to the big amount of protein in them.
