Healthy Vegan Cookie Cake Bars With Blueberries and Sour Cherries

What’s better than fresh cookie cake bars straight out of the oven? And topped with amazing antioxidant-packed blueberries and sour cherries. Um, pretty much nothing! Imagine healthy treat, that you could enjoy without feeling guilty… Well, I’ve got the recipe, just for you.

And the best part about this recipe? It’s one-bowl kind of recipe! I know we all love them. This Vegan Cookie Cake Bars With Blueberries and Sour Cherries recipe is full of fiber, vitamins and antioxidants. And it is so easy to make. Just throw few ingredients together and voilà! Nothing fancy. But let me tell you, they taste amazing! If you’re searching for something to satisfy your tooth, you will love it. These bars are perfect for treat after dinner or a healthy snack.

Now, you can also make actual cookies out of this batter, but I decided to make cookie cake and cut it into smaller bars, to mix things up a little. But as I said, it is totally okay to make cookies and actually I made a few of them, just to show you it is possible and they came out just fine.

I added a little fruit on top of the bars to add freshness and extra flavor. I added blueberries and sour cherries because they are not so sweet, so it’s perfectly balanced with sweet cookie cake bar. But you can add any fruit you want, strawberries would be perfect as well.

And if you want to take the recipe to the next level, you can include some chopped almonds or hazelnuts to the batter. It will add extra crunch to the bars. I also added cinnamon, because you know, cinnamon just makes everything better.

Whichever way you’re gonna bake your own cookie cake bars, they will turn out rich in flavor, sweet, moist and the perfect comfort food.

Healthy Vegan Cookie Cake Bars

Serves: 10-15 bars Prep Time: Cooking Time:


  • 3,5 cups Spelt Flour
  • 2 cups Almond Flour
  • 1/3 cup Coconut Oil
  • 2 tsp Cinnamon
  • 5 tbsp Coconut Sugar
  • 8-12 tbsp Rice Milk
  • 1/2 cup Frozen Blueberries
  • 1/2 cup Frozen Sour Cherries


  1. In a large bowl mix all dry ingredients: spelt flour, almond flour, cinnamon and coconut sugar.
  2. Add melted coconut oil to the mixture and mix well. At this point you will probably want to use your hands, because the batter becomes too thick for the spoon.
  3. Now add 8 tablespoons of rice milk to the mixture and mix well. If needed, add some extra rice milk. The mixture should be like cookie dough consistency – not too thin and not too thick.
  4. Put the mixture into a fridge for at least 10 minutes, so it can cool down and thicken.
  5. Preheat the oven to 350°F (180°C).
  6. (After 10 minutes/When oven reaches the temperature) Line a flat baking tray with parchment paper and put the mixture in it. Now form a large oval cookie with your hands (or you can form any shape you want). Flatten the ‘cookie’ by pressing it down quite firmly, so it sticks together. The flatten mixture should be about 1/2 inch thick.
  7. Now press the blueberries and sour cherries into the shaped ‘cookie’ (look the picture above).
  8. Bake for about 25 minutes until golden brown.
  9. Cut large ‘cookie’ into smaller bars (see the picture above).
  10. Cool it down or enjoy warm.


You can store it in airtight container and it will last you up to 3-4 days. Also, you can top it with any kind of fruit you want.
