Healthy Vegan Blueberry, Strawberry and Raspberry Cake Parfait

I’m not gonna lie, I love desserts. I have quite big sweet tooth, so I’m always experimenting and trying to find new ideas for healthy desserts. And I must say, I’m pretty proud of this one. It’s so easy, yet so delicious and very satisfying.

The first layer is basically made of nuts and dates. I used Nutribullet to bled nuts, but didn’t blend them too long. I waned to be left with some bigger pieces, because I wanted my first layer to be crunchy. And you can absolutely use food processor. Just be careful – the first layer should not be too runny, or you won’t be able to place the layers without mixing them together.

The second layer is practically just chia jam. You can make the jam  from any fruit you want, but I find that the berry one is the most appropriate for this recipe. I made mine with strawberries and raspberries. Again, be sure that chia jam is not too runny. If it is, add a little bit of extra chia seeds,  mix and wait for 10 minutes.

The third and final layer is blueberry banana ice cream. I like to make this layer quite thick too, just like you would want your normal ice cream to be. Because of that, you will need to use frozen blueberries and bananas and not fresh ones. If you are having guests, make sure that you put this layer on top right before serving the dessert, because the ice cream melts pretty fast.

I always put some kind of fresh or frozen fruit on top, just to add some more texture to the parfait. You can also top it with some granola if you want, but for me, the fruit did the trick.

  • 22 Soaked Dates
  • 1/2 cup Hazelnuts
  • 1/3 cup Walnuts
  • 1/3 cup Cashews
  • 6 tbsp Strawberry and Raspberry Chia Jam
  • 2 Frozen Bananas
  • 1 cup Frozen Blueberries
  • 1 cup Almond Milk


  1. In a food processor or blender blend hazelnuts, walnuts, almonds and cashews. I recommend using pulse button, so you will be left with some bigger pieces in the mixture – they add a nice texture.
  2. After few seconds add soaked dates and push that pulse button few more times. You must get pretty sticky mixture in the end. If you’re dates weren’t soaked enough, you will have to add some extra water at this point.

The first layer is now finished, grab two jars or glasses and fill them with the mixture (like shown on the picture). Now it’s time to make second layer:

  1. Second layer is, as said, just chia jam. Put few spoons of it in each jar.

Time to make third layer a.k.a. blueberry banana ice cream:

  1. Put 2 frozen bananas, 1 cup of frozen blueberries and 1 cup of almond milk in a blender and blend till smooth consistency.
  2. Fill the jars with the ice cream.
