Healthy Gluten-Free Vegan Coconut Cookies

As summer is getting closer and closer to the end, I’m spending more and more time in my kitchen, creating new recipes. I just love the smell of freshly baked goodies on cold and rainy days. This time I decided it’s time for some healthy, low carb and gluten-free coconut cookies. They turned out so good! If you need quick and easy recipe (you need less than 30 minutes from the beginning to the end), this one is gonna be for you!

In this recipe I used almonds as a base (besides coconut flour), but you can easily use any other kind of nuts. Walnuts or hazelnuts would be perfect as well. The same goes with milk. Any plant based milk will do, and will not majorly influence the flavor of the cookies. I made medium sized cookies, but you can form any shape or size you want. You will just probably have to adjust the time of baking.

Extra tip: I recommend sprinkling some cinnamon on the cookies at the end, it takes everything on a whole another level. 😉

Healthy Gluten-Free Vegan Coconut Cookies

  • 1 cup Coconut Flour
  • 1 cup Almond Meal/Flour
  • 1/3 cup Coconut Oil (melted)
  • 1 cup Almond Milk
  • Juice of a 1/2 (big) Orange
  • 2/3 cup Coconut Sugar
  • 1 tsp Vanilla Extract
  • Pinch of Salt
  • 1 tsp Ground Cinnamon


  1. Preheat oven to 350°F (180°C).
  2. In a large bowl mix together all dry ingredients.
  3. In a separate bowl mix together all wet ingredients.
  4. Put wet ingredients in bowl with dry ingredients and mix well. If necessary, add a little extra almond milk.
  5. Prepare flat baking tray with parchment paper.
  6. With your hands form small balls and flatten them with your fingers, so you get round shaped, medium-sized cookies (see the picture above).
  7. Bake cookies 12-15 minutes (until light brown).
  8. Let them cool before transferring them.
  9. Enjoy.
