The Easiest Healthy Vegan Breakfast Pancakes With Berry Sauce

Okay guys. This is literally the easiest recipe for pancakes you will ever see. And the best thing about it is, that it’s super healthy too! Here is how you make these healthy vegan breakfast pancakes.

There are just 3 main ingredients to make the pancake batter. You just have to blend oats, ripe banana and plant based milk and you are done! I added a tablespoon of cinnamon for some extra flavor and because of its benefits, but you can easily skip it if you prefer it that way. I have to say it is really important that the banana is ripe enough – you know, the one with the brown spots. It helps the batter to be smoother and the pancakes be sweeter. So there is really no need to add an extra sweetener.

To make the pancakes a little more fun I made blueberry sauce and even the recipe for the sauce is the easiest ever. You just put a cup of frozen blueberries into a saucepan and cook them over a medium heat until they form a thick sauce. You can stop cooking it earlier so the sauce is more watery, if you prefer it that way.

This recipe is so easy, yummy and healthy, you literally have no excuse not to make it. 🙂 It is perfect breakfast food, because it’s made of oats and banana which contain healthy carbs, plant based milk for calcium, coconut oil for healthy fats and blueberries for antioxidants.

  • 1 cup Oats
  • 1 medium Ripe Banana
  • 3/4 cup Plant Based Milk
  • 1 tsp Ground Cinnamon
  • 1 tsp Coconut Oil
  • 1 cup Frozen Blueberries


  1. Put frozen blueberries in a saucepan and cook them over a medium heat. Stir occasionally.
  2. In the meantime put oats, banana, plant based milk and cinnamon in a blender and blend for about a minute, until smooth.
  3. Add coconut oil in a heated frying pan so it melts.
  4. Cook pancakes in a frying pan over a medium heat.
  5. Serve pancakes with the blueberry sauce.
  6. Enjoy!


You can use any plant based milk. For this recipe I usually use almond milk, but oat milk, soy milk or cashew milk is great too.
