Best Healthy Vegan Homemade Granola Recipe

This healthy vegan homemade granola recipe is great option for healthy breakfast or a quick, nutritious snack. Made with wholesome ingredients and oh, so easy to make!

I must admit I’m not a huge fan of store bought granola. I just find it loaded with unnecessary sugar and other sweeteners, that are obviously not that healthy for you. This is the reason I almost always make my own homemade granola. This way I can always know what’s in my granola and can add just the ingredients that are beneficial and actually healthy.

In my opinion, homemade granola tastes way better than store bought one, so there is really no reason why you should continue to buy it in the store. And the best part about making your own is, that you can totally alternate it to your own preferences. You can make chocolate, berry, coconut or any other type of granola, just by adding or replacing few of the ingredients. The options are really endless. And it is so easy.

The recipe is made of two steps. You have to prepare dry and wet ingredients (see the ingredients list below). Firstly, you will have to mix all your dry ingredients and than separately, in mix wet ingredients. The final step is to combine everything together and that’s it. Super easy!

In this recipe I included few of my favorite nuts and seeds, and the combination is pretty awesome. I love having it for breakfast with yogurt or milk or quick snack just by itself. And if you keep it in airtight container, it will last you for quite a long time.

Healthy Vegan Homemade Granola Recipe

Ingredients

  • 2 cups Oats
  • 1/2 cup Pumpkin Seeds
  • 1/2 cup Sunflower Seeds
  • 1/2 cup Walnuts
  • 1/2 cup Cashews
  • 1/2 cup Cacao Nibs
  • 2 tbsp cup Maple Syrup
  • 1 tbsp Coconut Oil
  • 1 tsp Cinnamon
  • 1/2 tsp Vanilla Extract

Instructions

  1. Preheat the oven to 350°F.
  2. Combine oats, pumpkin seeds, sunflower seeds, walnuts and cashews in a large bowl.
  3. In a sauce pan melt coconut oil (over a low heat), add maple syrup, vanilla extract and cinnamon.
  4. Mix the liquid ingredients with the dry ones. Stir well.
  5. Spread mixture evenly onto a baking tray (tip: use parchment paper or cooking spray!)
  6. Bake for about 30 minutes. Stir every 10 minutes.
  7. Remove from the oven, add cacao nibs and let it cool completely.
  8. Store in an airtight container.
  9. Enjoy.
