Creamy Vegan Rice Pudding Recipe

Creamy Vegan Rice Pudding Recipe is great dessert or mid afternoon snack. You can serve it hot or cold, and add any toppings you like.

Rice pudding is one of my favorite desserts and it takes me way back when my grandmother used to make it all the time. This is such an easy dessert, and you probably always have the main ingredients in your kitchen. You can flavor it any way you want, it could be raisins, vanilla, cinnamon, chocolate or something else. In this recipe I only used traditional ingredients that I would normally use while making this dish.

Any type of milk would do, but for me, coconut milk or rice milk are the best for rice pudding. Although I almost always use brown rice or long grain rice in my recipes, I recommend using short grain rice for this recipe, because it will make the pudding creamier. But if you only have medium grain or long grain rice on you hands, you can use that one, of course. For some extra creaminess I added full-fat coconut cream, but you can skip this step, if you prefer the dessert to be a little lighter.

You can top the pudding with anything you like. Great option is dark chocolate, crunchy cookies or some hot fruit. This time I went for a simpler version and just added some orange peel and cinnamon. As already said, you can serve it cold or hot, I prefer it when it’s warm, especially in those colder days that are coming.
