Healthy Vegan Veggie Sandwich with Peanut Butter Sauce

We are happy to introduce to you another healthy and delicious breakfast, lunch or even dinner option. This healthy vegan veggie sandwich with peanut butter sauce is both nutrition dense and mouth-watering, which is, for us, the prefect combination!

You can of course stuff the sandwich with any veggies you prefer, but we find the combination of peanut butter sauce, tomatoes, cucumber, lettuce, avocado and olives as the perfect one. So refreshing, yet so filling and satisfying.

Healthy Vegan Veggie Sandwich with Peanut Butter Sauce

Serves: 1 Prep Time: Cooking Time:


  • 2 pieces of Wholegrain Spelt Toast
  • 2 Lettuce Leaves
  • 1/2 Avocado
  • 4 Olives
  • 3 Cherry Tomatoes
  • 3 slices of Cucumber
  • 1 tbsp Peanut Butter Sauce


  1. Wash lettuce leaves, mash avocado and slice olives and cherry tomatoes.
  2. Spread mashed avocado on piece of a toast, add lettuce leaves, tomatoes, cucumber and olives.
  3. Add peanut butter and close the sandwich with another toast slice.
  4. Enjoy.
