Soups are one of my favorite things to cook (and eat). Mostly because you can literally make them from whatever you have in the fridge. Plus, they are very easy to make and so delicious! Not to mention, they can be so nutritious, especially if you include many different kinds of veggies, legumes and herbs in it.
This one is made of all the good stuff – asparagus, potatoes, garlic, onions… The mixture will hit the spot if you’re down for light yet delicious bowl of creamy soup. This one gets extra points for including seasonal veggies, like asparagus. #healthfact Asparagus is particularly known to have anti-inflammatory benefits and therefore reduces the risk of heart diseases and diabetes. They also help us get rid of all the toxins that might be in our body (1).
Potato will make the soup extra creamy, but don’t worry if you don’t have any on hands. I tried this recipe without the potato and it turned out just as perfect. Just make sure you use enough asparagus and don’t add too much water, or the soup will be too watery. It’s better to add less water at first and then add more if needed.

Creamy Spring Asparagus Soup
- 10 asparagus spears
- 1 potato (medium)
- 1 onion
- 2 garlic cloves
- 1/2 lime (juice)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp coconut oil
- 3 cups water
In a sauce pan over a medium heat melt coconut oil, then add chopped onion and salt. Saute for few minutes until onions become light yellow.*
When onion is slightly caramelized add chopped garlic, asparagus and potato. Saute this for another minute.*
Then add water, stir and cook for about 20-25 minutes.
When cooked, remove from the stove and blend it with stick blender until smooth.
Add juice of half a lime and black pepper.
*You don't have to worry about chopping the ingredients finely - it all gets blended in the end anyways.
