Dandelion is finally back in season and I couldn’t be happier! It’s one of my favorite spring salads ever, especially combined with warm potatoes and olives. Plus, it’s so healthy and nourishing!
Dandelion is a great source of vitamins such as vitamins A, E and K. It is also packed with iron , calcium and potassium. Besides that, dandelion promotes healthy and glowing skin, it helps to balance blood sugar and helps to protect our eyes health. How amazing is that?
For this recipe, you will need:
DANDELION AND POTATO SPRING SALAD
- 1 bowl dandelion greens (washed)
- 3 potatoes (chopped in cubes and cooked)
- 5 olives (sliced)
- 1 clove garlic (finely chopped)
- 1/2 cup beans (cooked)
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt + pepper to taste
- Mix all the ingredients together and you've made yourself a delicious spring salad.
