How to get more raw veggies into your diet? Well, with delicious salads, of course! This one is so simple to make, but tastes delicious.
As always, you can substitute any of the ingredients or add extra, if you like. These are the ones I used:

SIMPLE SPRING SALAD
Ingredients
- 1 bowl greens
- 1 cup red cabbage (shredded)
- 5 cherry tomatoes (chopped)
- 1 cup chickpeas (cooked)
- 1 tbsp hemp seeds
- 1 tbsp pumpkin seeds
- 3 sun dried tomatoes (chopped)
- 1 clove garlic (chopped)
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt + pepper to taste
Instructions
- Mix all the ingredients together and serve.
