I always alternate between different ingreedients, depends on what I have in the fridge, but this time I included: quinoa, beans, chickpeas, tomatoes, red and green bell pepper, onion, tuna, sunflower seeds, parsley, some lemon juice and salt & pepper. 🌿

A delicious warm breakfast when you have a little bit of extra time on your hands in the morning. I made this one with OG oatmeal ingredients (oats, plant-based milk, water, banana, cinnamon, nuts, seeds & cherries), but you can always adapt ingredients to your preference, of course.
Baked oats are also great reheated the next morning, which is always a plus in my books. πŸ™ŒπŸ»

Made with leftovers from the previous day - such an easy and quick to prepare lunch, that I opt for very often. I usually cook larger quantities of food (quinoa/rice/roasted veggies) than I eat, so I have ingredients for this kind of bowls conveniently stored in the fridge. Perfect for times when I need to make a very quick meal.

In my bowl: leafy greens, quinoa, white rice, roasted veggies (pumpkin, bell peppers and cherry tomatoes) Β» topped with sunflower seeds, salt and pepper.
